Our Story

Solena Cheese was started by Marc and Keila. Marc has a strong sales background and spent over 20 years in business development in the hospitality field before he discovered his passion for cheese making. Marc started making cheese in Sydney, Australia where he lived for 10 years. He began his cheese making journey at, Vannella Cheese, one of the most well known mozzarella cheese makers in Australia. Vannella has a long history of cheese making going back 50 years where owner Vito began making cheese in Puglia Italy- The birth place of Burrata! He eventually made his way to Australia and founded Vannella cheese in 1983. Vito's son Guiseppe is how Marc found his cheese making passion. Vito and Guiseppe took Marc under their wing and taught him the beautiful trade of making mozzarella. In 2021 Marc decided it was time to move his family to the United States to be closer to home. With the support and blessing of the Vannella Cheese family he decided to continue his passion of mozzarella making and… Solena Cheese was born. “Solena” originated from Marc and Keila’s children Sofia and Elena. We know it is “cheesy” and we love it.

Solena Cheese is…Locally made fresh mozzarella available in many forms. Fresh Burrata made entirely by hand with a knot tied into the cheese- the True Italian way. Our Burrata plates as a piece of art.

Our Oaxaca will be stretched and hand rolled. Ricotta scooped out of the vats by hand. Treccini and Nodini tied entirely by hand. Pizzarella - cheese made with less moisture specifically for pizza making. This is Solena Cheese!
